Cauliflower Jollof Rice

Jollof rice is a beautifully aromatic and vitamin C rich West African favorite. Delicious and filling, Jollof can be moreish. So to combat the carbs, we substitute the rice with the all naturally low carb cauliflower rice. Satisfy your craving — Guilt-free.

Ingredients

Fish Marinade

2 cloves Garlic
1 tsp Ginger
1 tsp Soy Sauce
1 Frozen Boneless Fish
Handful Coriander

Cauliflower Jollof

1 tin tomatoes
1 Red Bell Pepper
1 Onion
4 cloves of garlic
1 tsp Ginger
3 Birdseye Chillies
320g Cauliflower Rice
1 Stock cube


Directions
  1. Finely chop and mince all the Fish Marinate ingredients.
  2. Marinate your fish and leave to rest for a few minutes and preheat your oven to 200ºC.
  3. In the meanwhile, blend all of the Cauliflower ingredients except the rice and stock cube.
  4. Put your fish in the oven on some greaseproof paper and grill for 20 minutes.
  5. Begin to cook the sauce for 5 minutes on a medium heat.
  6. Add the stock cube and some salt to taste.
  7. Allow to cook another 5 minutes and then remove ½ cup of the sauce into a separate small pot.
  8. Add your leftover cooked rice into the big pan, then add 1 cup of finely chopped cauliflower rice into the small pot.
  9. Make sure both pots are on a low heat.
  10. The cauliflower rice is done in 2 – 5 minutes. While the jollof is ready in 5 minutes.
