Ingredients
- 400g Everyday Value Plum Tomatoes (Tesco)
- 300g Pumpkin Seeds (Valued Naturals)
- 5.0g Bird's Eye Chillies (Tesco)
- 1.0 Container Anchovy Fillets In Olive Oil (Tesco)
- 2.0 Medium Sweet Raw Red Peppers
- 1.0 tbsp Smoked Paprika (Morrisons)
- 1.0 tbsp Onion Powder (Granules)
- 1.0 tbsp Ground Ginger
Instructions
- Put pumpkin seeds into food processor and blitz until broken down. Set aside.
- Put red peppers, plum tomatoes into food processor with anchovies, birds eye chillies, onion granules, ginger and smoked paprika. Blitz until smooth.
- Add tomato mixture into hot pan and cook until it becomes thick paste.
- Add seeds in with half cup of water and cook for 5 minutes. You can add salt to taste.
- Serve on roasted red pepper with some rocket salad or in a bed of rice.
