Gluten-free Coconut Cake Balls

Resourceful, decadent and absolutely delicious, gluten-free coconut cake balls. This recipe is simple and believe it or not, is made with Maize-meal.

Ingredients

100g Caster Sugar
75g Coconut Oil
1 Egg
0.5 tsp Vanilla Bean Extract
100g Porridge
100g Coconut Flour
100g Gluten Free Flour
150ml Coconut Milk

Directions
  1. Cream (whisk) coconut oil and caster sugar until smooth.
  2. Add the egg, vanilla bean extract, porridge.
  3. Whisk until smooth.
  4. Add the coconut milk, coconut flour and gluten-free flour.
  5. Whisk until thick.
  6. If it’s not thick enough, add more gluten-free flour.
  7. Make into balls.
  8. Bake for 20mins at 180º Celsius.
