1 cup cooked baby potatoes
2 tbsp hummus
1 tbsp flour
1 tbsp chopped fresh coriander
1 tsp balsamic vinegar
1 tsp soy sauce
Directions
- Chop up baby potatoes and add to bowl.
- Add hummus, flour and coriander and mix.
- Shape into 6 balls and lightly fry, 2 minutes on each side.
- To make dipping sauce mix soy sauce and vinegar.
- Serve potato cakes with dipping sauce.
