Hummus Potato Cakes
Potato Cakes with an African difference - made with Egyptian Hummus. Make your parties great and give your guests a unique experience with this recipe.
  1. 1 cup cooked baby potatoes
  2. 2 tbsp hummus
  3. 1 tbsp flour
  4. 1 tbsp chopped fresh coriander
  5. 1 tsp balsamic vinegar
  6. 1 tsp soy sauce
  1. Chop up baby potatoes and add to bowl.
  2. Add hummus, flour and coriander and mix.
  3. Shape into 6 balls and lightly fry, 2 minutes on each side.
  4. To make dipping sauce mix soy sauce and vinegar.
  5. Serve potato cakes with dipping sauce.
