Roasted red skin peanuts are a hugely popular street food in Zimbabwe and it’s easy to figure why — they are gorgeous and a great high protein treat. Combining them with pumpkin and sunflower seeds, full of healthy fats and high in fiber, will keep you fuller for longer.

50g Pumpkin Seeds
50g Sunflower Seeds
1/2 Cup Water
Turn on the stove to full heat. Place pan on heat and make sure it’s really hot.
Add the peanuts, pumpkin seeds and sunflower seeds to the pan.
Because you are cooking on high heat, make sure to keep tossing every so often so they don’t burn.
Continue to roast until you see them take on a bit of color.
At this point, add your salt and pepper to taste.
Then add about 2 – 3 tablespoons of water.
Roast further for another 2minutes or so, until the water has evaporated and the nuts are back to a crunchy red.
